Ground beef stuffed peppers recipe

Stuffed peppers are a very versatile dish since they can be prepared with a great variety of peppers and with an infinite number of fillings. There is a style for every taste, very spicy, not very spicy or not spicy at all, with sweet, sweet, and sour or salty filling, big, medium or small, and you can use your creativity when cooking them. This time has for you an exquisite Mexican recipe, a dish that consists of peppers stuffed with a delicious minced meat mince. You will love it since besides being an easy and practical recipe, it is very healthy and contains a great number of vegetables, it is cooked in the oven and, therefore, it has very little fat.

  • 4 pieces of bell pepper
  • 400 grams of ground beef
  • 2 carrots
  • 200 grams of Peas
  • 1 large potato
  • ¼ Onion
  • 1 clove of Garlic
  • 1 pinch of salt
  • 1 pinch of Pepper
  • 2 tablespoons of oil


In the following image, you will see the ingredients we will need for the preparation of these delicious peppers stuffed with ground beef. In some countries, peas are known as vetch or peas.

Let’s start by chopping the carrot and potato into small cubes. Once ready, place them in a saucepan with enough boiling water to cook them very well. We also add the peas and let everything cook together, adding a pinch of salt. This process can take approximately 20 minutes. Once the vegetables are cooked, remove them from the heat, drain them, and set them aside.

In another deep saucepan add the oil, heat it over medium heat, and, once hot, add the chopped onion and garlic to fry. Add a pinch of salt.

Once the onion is transparent, to continue with the stuffing of the peppers, add the ground beef to the pan and stir to incorporate it perfectly. Let it cook for approximately 15 minutes, stirring constantly so that the cooking is uniform.

In the meantime, take the peppers and cut off the top part with the stem to form a kind of lid (as shown in the picture). Then, we devein the chiles and clean them very well inside. We reserve them for a moment.

On the other hand, once the ground beef is cooked, we add the vegetables and let the stuffing ingredients finish cooking together.

When the ground meat and the vegetables are ready, we proceed to stuff the peppers. To do this, we take some of the stew and cover the inside of the peppers completely, as shown in the picture.

Once stuffed, we place them on a greased baking tray with a little butter, we put some string cheese on top, or any other type of cheese, we add the caps so that they also cook on the side, not on top of the peppers, and we bake the peppers stuffed with ground beef for 10 minutes at 170 °C (350 °F).

After this time, the peppers stuffed with ground beef are ready to enjoy. They are perfect with a little white rice or creamed corn. With these baked peppers you will look like a professional chef since they have a striking and original presentation and an exquisite contrast of flavors.
